Most olive oil is made from fully ripened fruit. The olives are left on the tree until they're fat, dark, and oil-heavy, maximising yield and minimising cost. Early harvest is a deliberate choice to do the opposite. We pick before full ripeness, when the olives are still transitioning from green to just a hint of colour. At this stage the fruit holds its highest concentration of polyphenol, the natural antioxidants responsible for the oil's bitterness, pepperiness, and nutritional potency. The trade-off is yield: early harvest olives produce significantly less oil per tree. What you lose in quantity, you gain entirely in quality.
And unlike supermarket oils that can sit in storage tanks for months, sometimes over a year before reaching a shelf, this oil goes from our trees to the press to your bottle within weeks. Every bottle carries the harvest date. That's our promise of freshness.

Unfiltered means the oil goes straight from the press into the bottle without being passed through a filter to remove fine olive particles. Those particles are a good thing, they carry flavour and nutrients. You'll notice the oil looks slightly cloudy or hazy. That's not a flaw. That's freshness you can see.

Away from heat, light, and air, those are the three enemies of good olive oil. A cool, dark cupboard is ideal. Not the fridge, and not next to the stove. Once opened, use it within 6–8 weeks for peak flavour. The bottle is dark glass for a reason, it's protecting what's inside.

Use it raw. This is a finishing oil, drizzle it over food just before serving. Grilled fish, fresh burrata, warm sourdough, roasted vegetables, a simple bowl of soup. Heat destroys polyphenols, so save this oil for the moment it counts. For everyday cooking, use a lighter oil and save Kardella Early Harvest EVOO for the finish!

That peppery catch at the back of the throat is oleocanthal, a naturally occurring compound in high-quality early harvest olive oil with anti-inflammatory properties similar to ibuprofen. It's not a defect. In the olive oil world, it's a quality signal. The more robust the pepper hit, the higher the polyphenol content.
